Abstract

Excitation-emission and three dimensional comparative matrices have been obtained from the fluorescence spectra of 63 samples of olive, sunflower, soybean and corn oils after excitation in the 370 nm to the 450 nm range. Different methods to represent and process the three-dimensional data have been used and their advantages and disadvantages have been commented.
